Chilli Con Carne

Spicy, saucy chilli con carne, easy one pot dinner perfect as a make ahead weekday dinner or as leftovers.
Prep time: 45 minutes


  • 2 Tbsp Oil
  • 1 Tsp Cumin
  • 1 Tsp Oregano
  • 1 Tsp Paprika
  • 1/2 Tsp Coriander
  • 1/2 Tsp Ginger
  • Salt & Pepper
  • 1kg Minced Meat
  • 2 Diced Onions
  • 6 Celery Sticked Diced
  • 2 Diced Peppers
  • 250ml Vegetable Stock
  • 1 Tin Chopped Tomatoes


  • Heat 2 tbsp oil in a frying pan, add the onion, pepper, celery and spices and fry until softened, in a separate pan cook the mincemeat until brown, once cooked, leave to onee side.
  • Once the vegetables and mincemeat are ready, add together in a heavy bottomed pan, season accordingly, add the hot stuff, vegetable stock and chopped tomatoes, leave to simmer for 40 minutes.
  • Add the kidney beans (drain first) and cook for a further 5 minutes, serve with rice.
