Cheesy potato bake
Perfect fluffy potatoes with a crunch, drizzled with Curry sauce, an ideal snack or accompaniment.
Prep time: 50 minutes
- 8 Large Potatoes
- 50ml Oil
- Salt & Pepper
- 1 Tsp Smoked Paprika
- 1 Tsp Oregano
- Peel and cut the potatoes into bite sized chunks, simmer for ten minutes, drain and shake in a colander.
- Heat oil in a roasting dish for 10 minutes at 200, once heated add the potatoes and sprinkle on the spices and seasoning, cook for 40 minutes, shaking twice throughout.
- When the potatoes are nearly done, fry the bacon and the spring onion in a pan for 5 minutes until softened.
- Once the potatoes are cooked, serve with a generous drizzle of curry sauce.
