Egg Fried Rice

Spicy Egg Fried rice, suitable for vegetarians, an ideal quick mid week dinner.
Prep time: 10 minutes


  • 2 Eggs
  • 2 Pouches of Microwaveable Rice
  • 1 Diced Pepper
  • 2 Diced Onions
  • 2 Chopped Garlic Cloves
  • 1/2 Tsp Ginger
  • 1/2 Tsp Cinnamon
  • Salt & Pepper
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Chilli Garlic


  • Fry the pepper, onion and garlic cloves in 1 tbp oil for 5 minutes until soft, add the seasoning and cook for a further 2 minutes.
  • In a separate pan, cook the egg in 1 tsp oil, mixing it as if making scrambled egg, keeping the bits broken up and small, once cooked leave to one side.
  • Add the rice, soy sauce and chilli garlic and cook through, mix in the fried egg to finish.
