Loaded Sweet Potato Wedges

  • 2 tbsp Oil
  • 1 Diced Onion
  • 1 Diced Pepper
  • 1 Tbsp BBQ
  • Salt & Pepper
  • 3 Large Sweet Potatoes
  • 1 Tsp Cumin
  • 1 Tsp Garlic Granules
  • 1/2 Tsp Ginger
  • 1 Tsp Paprika
  • 1/2 Tsp Coriander
  • Crucials Spicy Mayo
  • 200g Grated Mozarella


  • Fry the chopped onion and pepper in oil, BBQ, salt and pepper until softened for about 10 minutes.
  • Chop the sweet potato into even sized wedges, mix with oil and seasoning and bake at 180 for 30 minutes, tossing half way through.
  • Once cooked, layer on the pepper and onion, spicy mayo and cheese and grill for 3 minutes under a medium heat until the cheese has melted.
