Ingredients
- 2 tbsp Oil
- 1 Diced Onion
- 1 Diced Pepper
- 1 Tbsp BBQ
- Salt & Pepper
- 3 Large Sweet Potatoes
- 1 Tsp Cumin
- 1 Tsp Garlic Granules
- 1/2 Tsp Ginger
- 1 Tsp Paprika
- 1/2 Tsp Coriander
- Crucials Spicy Mayo
- 200g Grated Mozarella
Instructions
- Fry the chopped onion and pepper in oil, BBQ, salt and pepper until softened for about 10 minutes.
- Chop the sweet potato into even sized wedges, mix with oil and seasoning and bake at 180 for 30 minutes, tossing half way through.
- Once cooked, layer on the pepper and onion, spicy mayo and cheese and grill for 3 minutes under a medium heat until the cheese has melted.
