Ingredients

  • 2 Tbsp Oil
  • 3 Diced Onions
  • 2 Diced Peppers
  • 2 Diced Garlic Cloves
  • 1/2 Tsp Cumin
  • 1 Tsp Paprika
  • Salt & Pepper
  • 1 Tsp Oregano
  • 1 Tin Mixed Beans
  • 1 Tbsp Hot Stuff
  • 2 Tbsp BBQ
  • 200g Grated Cheese
  • 8 Tortilla Wraps

Instructions

  • Fry the onion, pepper, garlic and spices in 2 tbsp oil over a medium heat for 5 minutes until softened.
  • Add the mixed beans (don’t drain), hot stuff and bbq sauce and leave to cook for 10-15 minutes until the sauce has reduced, stir to avoid sticking.
  • Remove from the heat and leave to cool, once cooled add the cheese and mix until all ingredients are combined.
  • In a frying pan, add a drop of oil and warm the tortillas through for 1 minute each side, add the filling so that it covers half the tortilla, keeping the other side untouched.  Flip in half so the tortilla becomes a semi circle, cook for 2 minutes each side or until cheese has melted.
