Fry the onion, pepper, garlic and spices in 2 tbsp oil over a medium heat for 5 minutes until softened.
Add the mixed beans (don’t drain), hot stuff and bbq sauce and leave to cook for 10-15 minutes until the sauce has reduced, stir to avoid sticking.
Remove from the heat and leave to cool, once cooled add the cheese and mix until all ingredients are combined.
In a frying pan, add a drop of oil and warm the tortillas through for 1 minute each side, add the filling so that it covers half the tortilla, keeping the other side untouched. Flip in half so the tortilla becomes a semi circle, cook for 2 minutes each side or until cheese has melted.
