Creamy classic tomato soup with a slight chilli kick, great weekday dinner that cooks itself, perfect as a starter or a main with crusty bread.

Ingredients

  • 1KG Tomatoes
  • 1 Large Red Onion
  • 2 Celery Sticks Diced
  • 1 Large Carrot Peeled and Diced
  • 1L Vegetable Stock
  • 2 Tbsp Oil
  • 4 Garlic Cloved Finely Diced
  • 4 Tbsp Chilli Ketchup
  • 2 Tbsp Mixed Herbs
  • 4 Tbsp Double Cream

Instructions

  • Fry the onion and garlic in oil, mixed herbs, salt and pepper for 5 minutes until softened, add the carrot and celery and cook for a further 5 minutes.  Add the tomatoes, chilli ketchup and stock and simmer for 40 – 45 minutes until all vegetables are soft.
  • Blend the soup and stir in cream.
